Quick Beef Stroganoff

MicrosoftTeams-image (17)The weeknight rush can be a challenge, but we’re about to give you a free pass with dinner made easy! This quick beef stroganoff recipe is simple to whip up and pairs nicely with whole grain egg noodles or brown rice to create a filling dish.

It’s creamy comfort food that doesn’t require any complicated ingredients or too much of a time commitment. The recipe serves 4 to 6 people, so you might score some leftovers too. You’ll need:

  • 1 lb. lean ground beef or turkey
  • 1 ½ cups vegetable or chicken stock
  • 1 cup light sour cream
  • 1 tsp. cornstarch (optional)
  • Salt and pepper, to taste

Now, grab a large sauté pan and let’s get started!

  • Brown the meat over medium heat. Once it’s fully cooked, drain the excess juice.
  • Add the stock and sour cream directly to the pan and stir to combine.
  • Add a pinch of salt and pepper, to taste.
  • Optional: If you’d like to thicken your sauce, stir in the suggested amount of cornstarch. Let it simmer just long enough for the magic to happen.

Yes, it really is that fast! You can serve it over your prepared noodles or rice. Or you can add your starch of choice to the sauté pan and just mix it all together, casserole style. We’ll leave that part up to you.
